Cocktail De Camarones Baja Style |

Imagine sitting in front of a sunset in the southern most tip of mexico, friends, fun and of course food. The Corona is the cherry on this sunday :) Ingredients:
1 -2 lb shelled and cooked shrimp (50-60 count is good) |
2 -3 large tomatoes, chopped |
1/2 small white onions, chopped or 2 green onions |
1/4 cup cilantro, slightly chopped |
1 jalapeno, diced, with seeds |
1 clove minced garlic |
1 avocado, chopped |
tomato juice |
1 tablespoon of chalupa or tabasco |
lime juice |
salt and pepper |
garlic salt |
Directions:
1. After you chop the tomatoes, onions and cilantro mix together in a bowl, add the diced jalapeno pepper and garlic. 2. Add about 1-1/2 cups of tomato juice (V-8 (spicy is what I like to use). 3. Then add about 2 tablespoons or more to taste of lime juice (lemon juice will do if you don't have lime and fresh is always better) Add garlic salt to taste do the same to the salt and pepper. 4. Add the shrimp and avocado. 5. Do a taste test to see if you may need to add one or more of the above ingredients. 6. Cover and refrigerate about an hour or until ready to serve. 7. Garnish with 1/2 lime reserve second 1/2 for beverage of choice. 8. Serve with fresh corn tortilla strips or crackers. 9. And of course a Corona with fresh lime :) |
