A step above a Cobb Salad. It has a bit of zing and is very satisfying. Ingredients:
3 tablespoons white wine vinegar |
2 tablespoons shallots, finely minced |
1 tablespoon dijon mustard |
salt and pepper to taste |
3 tablespoon extra virgin olive oil |
10 cups mixed salad greens |
1/2-3/4 pound cooked, shredded turkey breast |
2 hard boiled eggs, peeled and chopped |
2 strips bacon, cooked and crumbled |
2 medium tomatoes, diced |
1 large cucumber, peeled, seeded and diced |
1 avocado, diced |
3/4 cups crumbled blue cheese |
Directions:
1. In a bowl, whisk vinegar, shallots, mustard and salt and pepper. 2. Whisk in oil until combined well. 3. Place salad greens in a large bowl. 4. Add 1/2 of the dressing to coat. 5. Divide among 4 salad plates. 6. Arrange equal portions of turkey, egg, bacon, tomato, cucumber, avocado and blue cheese onto each salad. 7. Drizzle with remaining dressing. |
