Cobb Salad with garlic vinaigrette |

Ingredients:
1/4 cup(s) red wine vinegar |
1/2 cup(s) olive oil |
1 clove(s) garlic minced |
1/2 teaspoon(s) kosher salt |
3 whole(s) eggs hard-cooked |
8 slice(s) bacon cooked |
2 bunch(es) watercress |
1/2 pound(s) cherry tomatoes halved |
2 whole(s) avocado cut into chunks |
1 pound(s) large shrimp, lobster or chicken cubed - about 2 cups |
Directions:
1. Make dressing by blending vinegar, oil, garlic and salt. 2. Cut eggs into wedges and bacon small pieces. 3. Toss watercress w/ just enough dressing to coat lightly, then pile in center of large servicing platter or bowl. Next dress each lightly and separately, arrange tomatoes, avocados and shrimp in rows on top. Add the eggs and bacon. |
