Coastal Fried Chicken With Brown Crumb Gravy

Ingredients:
1 (3- to 3 1/2-pound) broiler-fryer, cut up
1 teaspoon salt
1/4 teaspoon pepper
1 cup all-purpose flour
vegetable oil
hot cooked rice
brown crumb gravy
Directions:
1. Sprinkle chicken with salt and pepper; dredge in flour.
2. Heat 2 inches of oil in a large skillet to 350°; add chicken. Cover and fry 30 minutes or until golden brown, turning once. Reserve 2 tablespoons drippings in skillet for gravy. Drain chicken on paper towels. Serve with rice and Brown Crumb Gravy.
