Clubhouse Oatmeal Waffles |

My kids get Clubhouse Jr. magazine and it usually includes a recipe that a child has sent in. This came from a little girl in Hawaii. My whole family enjoyed these waffles this weekend and it's the first recipe that has worked really well with my waffle maker. Very easy to whip together! I like to freeze an extra batch and pop them in the toaster to rewarm. A lot cheaper (and better) than the store bought kind! Ingredients:
1 1/2 cups flour |
1 cup oats |
1 tablespoon baking powder |
1/2 teaspoon cinnamon |
1/4 teaspoon salt |
2 eggs, slightly beaten |
1 1/2 cups milk |
6 tablespoons butter, melted |
2 tablespoons brown sugar |
Directions:
1. In a large bowl, stir together flour, oats, baking powder, cinnamon and salt. 2. In a small bowl, mix eggs, milk, butter and brown sugar. Add to large bowl and stir until blended. 3. Slowly pour batter onto preheated, lightly greased waffle iron. Follow your waffle iron directions for cooking time but they should be nicely browned. |
