Diet soup Ingredients:
1 lb lean ground beef |
1 (16 ounce) can low sodium diced tomatoes |
1 (10 ounce) can ro-tel tomatoes |
1 (10 ounce) can low-sodium tomato sauce |
4 cups beef broth |
1 (16 ounce) can corn, drained |
1 (16 ounce) can kidney beans, drained and rinsed |
1 small onion, chopped |
1 teaspoon minced garlic |
1 tablespoon chili powder |
1 teaspoon cumin |
Directions:
1. Brown ground beef with onion and garlic. Drain, if necessary. 2. Add all other ingredients and simmer over medium heat for 15 minutes. 3. Top with cheese and sour cream if desired. |
