Ingredients:
3 cups fresh clementine juice |
1 chopped shallot |
1 fresh thyme sprig |
2 tablespoons butter |
1/4 teaspoon salt |
Directions:
1. Combine clementine juice, shallot, and thyme in a heavy saucepan; bring to a boil. Cook until syrupy and reduced to 1/3 cup. Strain mixture, and discard the solids. Stir in butter and salt. Brush the glaze on pork, chicken, or beef while roasting. |
