Classy-ed Up Collard Greens

We, in the south, love our greens... collards are cheap and easy and can be a side to almost any southern dinner. This version raises the bar a bit with a few non traditional extras to give a new twist on an old favorite! Read more !
Ingredients:
1lb trimmed and washed collard greens(can sub mustard or turnip, if desired)
8 cups stock(chicken, veggie, pork, etc would all work... i use my own from when i smoke pork in my slow cooker, like here: easy smoked meat)
8 cups water
2t liquid smoke(can use less if using a smoky stock)
1t chipotle tabasco sauce(or adobo sauce)
1 large or 2 small lemons
1/2lb smoked bacon
2 medium onions, sliced in thin rings
3 cloves garlic, minced
1 cup sparkling wine or juice(i used a sparkling apple wine, as i used it, also, in this recipe; marinated pork chops with dijon mushroom cream sauce , which i served with these greens
1/2 cup honey
2-3t kosher, sea or smoked salt(these will need a fair bit of salt...i used a rounded t, each, of applewood smoked salt and my favorite salt/pepper blend)
fresh ground black pepper
Directions:
1. Pour stock into large soup or stock pot.
2. Add greens, then water to cover.
3. Add hot sauce, liquid smoke and about 1/2 the salt/pepper
4. Heat over high heat til boiling.
5. Meanwhile, cook bacon til crisp and crumble.
6. Pour off all but about 4T grease(reserve for mushroom sauce used in previous mentioned recipe, if desired ;)
7. Add garlic and onions and cook over medium heat til onions soften slightly.
8. Add sparkling wine and honey and heat through.
9. Pour entire mixture into greens pot and lower temp to simmer.
10. Simmer about 30-40 minutes more, until greens are tender, but not mushy.
11. Add lemon juice and mix to combine.
12. Season with remaining salt and pepper.
13. Serve sprinkled with bacon crumbles(I also added french fried onions to the top at serving! :)
