This is a dish published on a book I bought a couple months back entitled 365 Main Courses . I've never tried a Nicoise Salad before so I attempted it today with the modifications of what I had in my pantry. This is really good on a summer afternoon. Ingredients:
115g green beans (trimmed & halved) |
115g mixed salad leaves |
1/2 small cucumber (thinly sliced) |
4 ripe tomatoes (quartered) |
50g canned anchovies (drained) - optional |
4 eggs (hard-boiled & quartered or poached) |
1 small can of tuna in brine |
salt & ground black pepper |
50g small black olives - optional |
dressing |
6 tbsp extra virgin olive oil |
2 garlic cloves (crushed) |
1 tbsp white wine vinegar |
Directions:
1. For the dressing, whisk toegther the last 3 ingredients and season to taste with salt and black pepper, then set aside. 2. Cook the green beans for about 2 minutes (blanching) or until slightly tender, then drain. 3. In a large bowl, toss together salad leaves, cucumber, tomatoes, green beans, anchovies, olives and dressing. 4. Top off with the quartered egg(s) and flaked tuna (so it doesn't lose its shape) 5. Serve immediately - enjoy. :) |
