Classic Rice Pudding

Ingredients:
2 eggs
1/2 cup caster sugar
1 cup water
1 cup milk
1 teaspoon vanilla
1 green apple, peeled, cored, diced
1/2 cup prune, chopped
1 cup short-grain rice, cooked
nutmeg
Directions:
1. Whisk eggs and sugar together in a bowl.
2. Blend in water, milk and vanilla.
3. Add apples, prunes and rice to batter.
4. Stir well.
5. Pour into a greased 20 cm ovenproof dish.
6. Sprinkle with nutmeg.
7. Place pudding dish in baking dish.
8. Add enough water to come halfway up sides of dish.
9. Bake at 160 C for 45 minutes or till set.
10. Remove from water bath.
11. Serve warm.
