Ready, Set, Cook! Special Edition Contest Entry: When I created this classic Casserole I knew it would be a home run..This is an all-time favorite and quick and easy to put together then bake. It truley is a get ready set and bake!! A weekly request at my house. This is a jaw dropper, next response this is good!!! Ingredients:
3 tablespoons olive oil |
1 (20 ounce) package simply potatoes® shredded hash browns |
1/2 cup onion, chopped |
1/2 teaspoon salt |
1 egg, beaten |
1/2 cup cooked bacon, chopped |
1 medium yellow onion, chopped |
3 garlic cloves, minced |
1/2 cup frozen spinach, thawed and patted dry |
1/2 cup red pepper, chopped |
1 medium cauliflower (broken or chopped into small florets) |
1/2 teaspoon thyme |
1/2 teaspoon salt |
2 eggs |
1/2 cup milk |
1/2 cup goat cheese |
1 cup packed grated sharp cheddar cheese |

Directions:
1. Preheat oven to 375 degrees. Using 1 tablespoon olive oil, spread oil around bottom and sides of a deep dish 9-inch casserole pan. In medium size mixing bowl combine hash brown potato , onion and 1 beaten egg, mix well. Press and pat mixture in the prepared pan. Bake in a 375 degree oven for 15 minutes, then brush with olive oil and bake for 15 minutes more.Remove from oven. 2. While crust is baking, prepare the filling. In a medium skillet saute the bacon,onion and garlic in remaining olive oil until soft add the spinach, red pepper, cauliflower, thyme and salt. cover and simmer for 10 Minutes. 3. In a small bowl beat 2 eggs with milk . 4. To build pie sprinkle 1/2 cup goat cheese , 1/2 cheddar over potato crust, then the add vegetables, then the rest of cheese. Pour the egg and milk mixture over the top. Bake in a 400 degree oven for 35 to 40 Minutes. Slice and serve warm. |
