This was on back of a box of gnocchi that I bought. I tried making my own gnocchi one day and failed terribly. So now I'm trying the box stuff. Ingredients:
1 pinch coarse sea salt |
60 small fresh basil leaves or 30 large fresh basil leaves, rinsed and dried |
3 garlic cloves, peeled |
3 tablespoons pine nuts, lightly toasted |
2 tablespoons pecorino romano cheese, fresh, finely grated |
2 tablespoons parmigiano-reggiano cheese, fresh, finely grated |
3 -4 tablespoons virgin olive oil |
1 lb gnocchi |
Directions:
1. Cook gnocchi as directed on package. 2. In a blender add basil, salt and garlic. 3. Blend into a paste, add pine nuts and slowly pour half of the olive oil. 4. Add cheese and the remaining olive oil. 5. Blend until it becomes a creamy paste. 6. Pour over gnocchi and serve. |
