This is a classic version of a Southern Pecan Pie, it is a favorite around the holidays. If you like you can alter this recipe, to be a Rum Pecan Pie, by adding3 tablespoons of rum, when you add the eggs. Ingredients:
1/2 cup butter, melted |
1 cup sugar |
1 cup light corn syrup |
4 eggs, beaten |
1 teaspoon vanilla extract |
1/2 teaspoon salt |
1 unbaked 9 inch pie shell |
1 -1 1/4 cup pecan halves |
Directions:
1. Combine butter, sugar and corn syrup; cook over low heat, stirring constantly, until sugar dissolves. Let cool slightly. Add eggs, vanilla, and salt, mix well. 2. Pour filling into an unbaked pastry shell and top with pecan halves. Bake at 325F for 50-55 minutes. Pie can be served warm or cold. |
