Classic Peanut Butter Cookies With Quinoa Flour |

Peanut butter cookies made with 4/10 quinoa flour. Not gluten free. Ingredients:
1 cup smart balance omega plus |
1 cup peanut butter |
1 cup white sugar |
1 cup brown sugar, packed |
2 large eggs |
1 cup quinoa flour |
1 1/2 cups all-purpose flour |
1 teaspoon baking powder |
1 1/2 teaspoons baking soda |
1/2 teaspoon salt |
Directions:
1. Mix butter, peanut butter and sugars. Beat in eggs. 2. In a separate bow sift flour, baking powder, baking soda, and salt together. 3. Stir flour mixture into peanut butter mixture. Refrigerate for 1 hour. 4. Preheat oven to 375°F. 5. Roll into 1 inch balls, flatten, and place on greased baking sheet. Bake for 10 minutes or until cookies begin to brown. Do not over-bake. |
