These cookies are crisp on the outside and chewy on the inside. The flavor is a perfect balance of peanut and butter. Like store-bought PB cookies only better. They just might change your life! Ingredients:
1 cup brown sugar, firmly packed |
1 cup white sugar |
1 cup butter (plus 1/2 tsp salt if unsalted) |
1 cup peanut butter (creamy -- jif or skippy are good) |
2 eggs |
1 tsp vanilla |
2 tsp baking soda |
2 cup flour |
white sugar, for coating |
Directions:
1. Cream together sugars, butter, and peanut butter. 2. Mix in eggs and vanilla. 3. Combine dry ingredients and add gradually until well blended. 4. Roll into 1-inch diameter balls, then roll in a bowl of sugar to coat lightly. 5. Place on cookie sheet (12 per sheet). 6. Bake in 350°F oven for 13 minutes. Balls will melt into a perfect cookie shape. |
