Classic Mushrooms A La Greque |

One of the favored cold mushroom dishes of all time. It was a standard Saturday evening appearance at Rollande et Pierre relish tray. Remember those? A real relish tray served as soon as you sat down at the table, something you rarely see any more. Ingredients:
1 lb (450g) button mushrooms |
12 oz (350g) tomatoes |
1 1/2 oz (40g) finely chopped onion |
2 tablespoons olive oil |
1/2 pint (300ml) white wine |
1 garlic clove, crushed |
parsley |
salt & pepper |
Directions:
1. Fry the Onion in the Olive Oil. Add the White Wine and Garlic and season. Add skinned, quartered Tomatoes, along with the Mushrooms and cook for 15 minutes uncovered.
