This classic tea recipe is made by steeping green tea with spearmint leaves. In Morocco it is often served more than once a day. Although Moroccan Tea Pots are many sizes, small pots contain about a half liter or six glasses of tea. A large pot would hold about a liter or about 12 glasses of tea. This tea is served hot but in glasses rather than in cups as most Americans would tend to drink it. The Moroccan glasses are a work of art on their own, they are so lovely. The following measures are for a small pot of tea. Prep time is to boil the water. Cook time is for steeping. The original version of this recipe was found at ' '. If you can't get fresh spearmint leaves you can substitute 1/4 to 1/2 teaspoon of spearmint extract. Ingredients:
1 tablespoon green tea leaves |
10 -12 spearmint, leaves (fresh & washed) |
1/2 liter about 2 cups boiling water |
1/4 cup sugar |
Directions:
1. Boil a liter (about 4 cups) of water. 2. Rinse a small tea pot with about 1/4 cup of the hot water, then pour out the water. 3. Add the tea leaves and then add another 1/4 cup boiling water. 4. Swirl the pot to wash and rinse the leaves, and carefully pour out the water again. 5. Add the mint leaves and the sugar, and fill the pot with 1/2 liter (about 2 cups) the boiling water. 6. Let the tea to steep for five minutes. 7. Gently stir the tea. 8. Pour into small tea glasses and serve. |
