Classic Italian Arugula Salad |

This is a classic recipe, but so easy and delicious that it's worth repeating. If you like arugula, you have to try it this way. Ingredients:
'5 oz. arugula, washed |
1 lemon |
extra virgin olive oil (evoo) |
parmesan cheese, preferably reggiano. shaved. |
salt - again, high quality salt makes a difference in this one |
Directions:
1. Put the arugula in a bowl. 2. Squeeze lemon juice to taste over the greens. 3. Add some nice EVOO. 4. Add salt to taste, and toss everything together. 5. Plate the salad, and put the shaved Paremesan Reggiano on top. 6. Voila! The perfect blend of bitter, salt, sour, and pepper. 7. You could jazz this salad up by adding pear slices, pine nuts, and/or dried cranberries. But for me, why mess with perfection? |
