Mmm, makes the best chicken caccitore sauce! This broth adds a rich flavour as a base to soups, stews and sauces. Keep some handy in 2 cup freezer bags for soup base or almost any dish that has a sauce Ingredients:
1 chicken carcass after roasting a chicken (or an old laying hen) |
10 cups water |
1 large carrot |
1 onion |
1 celery rib |
2-4 cloves garlic |
1-2 bay leaves |
1 tsp thyme |
1 tsp salt |
1/4 tsp pepper |
Directions:
1. Chop vegetables coarsely and throw everything in the pot 2. Bring to a boil and simmer uncovered on med-low for 1.5 to 2 hours 3. Allow to cool 4. Pour through strainer and freeze in heavy duty 2 cup freezer bags 5. Yields approx 8 cups 6. Use as base for soups, sauces and stews |
