Winter warmer-classic french onion with a little less work. Serve with grilled cheese on bread or crunchy crutons
Ingredients:
1 kg of finely chopped onions
3 garlic cloves crushed
100-150 gr of good quality butter
tablespn of fresh sage chopped finely
tablespn of fresh thyme as above
1 large glass of dry white wine
3 bay leaves
1-1.5t litres of good beef stock
salt n pepper to taste
Directions:
1. Melt butter in a heavy bottomed saucepan and add onions-stew on a medium high heat for 10/15 mins or until onions are clear-keep stirring occasionally -careful NOT to burn 2. add garlic and herbs. lower heat and stew for another 20 mins stirring to ensure it isn't buring or sticking to bottom 3. turn up heat for a moment and add wine until it has reduced by 50 percent. Add hot stock and turn down heat -simmer for another 30 mins 4. Salt and pepper to taste
