Classic Buttermilk Pancakes |

from Cast Iron Skillet Cookbook Ingredients:
2 cups flour |
2 tablespoons sugar |
2 teaspoons baking soda |
1/2 teaspoon salt |
2 eggs |
2 cups buttermilk |
1/2 cup whole milk |
1/4 cup melted butter |
1 tablespoon oil |
Directions:
1. Mix dry ingredients together in bowl. 2. Mix wet ingredients together in different bowl. 3. Whisk wet into dry until just combined. 4. Add 1 T oil to medium-hot pan. 5. Drop 1/4 c batter into pan. Flip when bubbles begin to form. |
