I love pesto, but the commercial pestos and recipes I come across have so much oil, I can't bring myself to try them. Using a couple of recipes as a guide, I fiddled around until I came up with one that had the right consistency. -Kris McDowell, Eagan, MN Ingredients:
2 cups loosely packed basil leaves |
1/3 cup (about 1 1/2 ounces) grated fresh parmesan cheese |
1/4 cup fat-free, less-sodium chicken broth |
1 tablespoon coarsely chopped walnuts |
1 tablespoon extravirgin olive oil |
1/2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1 garlic clove, minced |
Directions:
1. Combine all ingredients in a food processor; process until smooth. |
