This is a great dessert that uses very little sugar. Ingredients:
2 eggs |
1/2 cup plus 2 tablespoons sugar |
1/4 cup flour |
2 cups milk |
1/2 cup butter or margarine |
1 tablespoon vanilla extract |
5 firm, medium bananas |
1 baked 9-inch pie shell |
1 cup whipping cream |
Directions:
1. In heavy saucepan, beat eggs, 1/2 cup sugar and flour until pale lemon color. Gradually beat milk into egg mixture. Cook, stirring constantly, over medium heat until sauce thickens. 2. Remove from heat. Stir in butter and vanilla until blended. Place plastic wrap directly on surface of filling to cover. Cool. 3. To assemble pie, slice bananas and fold into filling; spoon into pastry shell. Cover with plastic wrap and chill until ready to serve. Remove plastic wrap, whip cream with remaining 2 tablespoon of sugar until soft peaks form. Spread on top of pie. Enjoy! |
