This is not a traditional chili, but it has everything I love and want out of a comfort food-it's cheesy, flavorful, a little spicy, and full of flavor. If you are looking for a more traditional chili this is not the one for you, but if you want something a little different, you may love it as much as we do! I especially love this served in a bread bowl, or with buttered bread or cornbread.
Ingredients:
1 lb ground beef, browned and drained
1 (15 ounce) can whole kernel corn, drained
1 (28 ounce) can whole stewed tomatoes with basil
2 (15 ounce) cans dark red kidney beans
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can red beans, drained
1 (1 lb) package mild velveeta mexican cheese
6 -8 teaspoons chili powder
4 teaspoons hot mexican chili powder
1 teaspoon yellow curry powder
1 1/2 teaspoons red curry powder
1 teaspoon garlic powder
1/2 teaspoon ground black pepper
2 teaspoons onion powder
2 teaspoons cinnamon
1/8 teaspoon seasoning salt (optional) or 1/8 teaspoon hickory bacon salt (optional)
Directions:
1. Place meat, corn, tomatoes, and spices in a crock pot and stir to combine. Heat on low 7 hours (or through one work day).
2. Add beans and Velveeta and stir. Heat on low an additional 2-3 hours or until melted.
