Curry! Ingredients:
1 1/2 serving extra virgin olive oil |
5 potato medium (2-1/4 to 3-1/4 dia) potatoes, red, flesh and skin, baked |
1 medium onions |
4 oz diced green chilies |
1 tbsp curry powder |
1 tsp cumin |
2 cup peas, green |
0.33 cup, packed raisins, seedless |
1/2 oz lemon juice |
1/2 cup roasted and unsalted whole cashews |
1.76 oz cilantro |
Directions:
1. Boil potatoes sliced for 8 minutes, drain and set aside. Combine all ingredients in a pan and let simmer till heated thru. Serve with nan or couscous. |
