mashed potato dish that will have them guessing. Ingredients:
6 medium waxy potatoes (yukon gold or red spuds) |
1 pound parsnips |
1/2 cup sour cream |
3 mashed cloves garlic |
scant pinch of nutmeg |
salt and pepper |
Directions:
1. peel or leave skins on potatoes, boil until sharp knife pierces easily 2. strain, reserve some of the boiling water for adding to finished dish if necessary 3. in separate pan boil the peeled parsnips until tender, strain 4. mash potatoes and parsnips together, add mashed garlic cloves 5. set aside 5 minutes to let garlic cook 6. add sour cream , nutmeg and salt and pepper, thin with some potato water if necessary 7. serve with a knob of butter melted over |
