A meatloaf recipe given to my mum many years ago by a workmate. Never fails! A great sauce cooked with the loaf makes it perfect to have with creamy mashed potato. Ingredients:
500 g pork mince |
500 g beef mince |
2 onions |
2 slices bacon |
1 egg |
1 tablespoon curry powder |
1/4 cup parsley |
1/4 cup chives |
1 carrot |
3/4 cup breadcrumbs |
1/2 cup milk |
1/2 cup water |
1 cup tomato sauce |
1/4 cup worcestershire sauce |
1 teaspoon instant coffee |
1/4 cup brown sugar |
3/4 cup water |
Directions:
1. Loaf. 2. Chop onions, parsely, chives and bacon. Grate carrot.Add meat,breadcrumbs,egg,curry,milk and water. 3. Combine all ingredients well. 4. Put into a greased loaf tin. 5. Cook in moderate oven for about half an hour, then pour over sauce and cook a further 45 minutes. 6. Sauce. 7. Combine remaining ingredients. |
