I have been eating artichokes my whole life. I absolutely love them, and when they are in season I tend to over indulge on them. Another New Years Eve appetizer I made for me and the hubby, they are easy and delicious. Read more . Although I've actually never had clams casino, I can only hope they taste as good as the stuffing in this artichoke. As with my stuffed mushrooms, the beer can be omitted and interchanged with wine or chicken broth Ingredients:
1 large artichoke |
salt and pepper |
1 can chopped clams and juice |
3 cloves garlic minced |
3 slices bacon, cooked and chopped |
panko breadcrumbs |
3 tbsp italian seasoning |
2 tbsp melted butter |
1/2 cup beer, divided |
1/4 cups parmesan cheese |
Directions:
1. Cut the stem of the artichoke to about 3/4 of an inch. Cut off tops and trim remaining leaves of the artichoke. In a small saucepan add artichoke and cover with water, salted slightly. Bring to a boil and let sit for 10-15 minutes. 2. In the meantime, preheat oven to 350. 3. Combine all ingredients, using only 1/4 cup of beer. Once artichoke is tender, remove. Let cool slightly for easy handling. Open artichoke so stuffing can easily go in between the leaves. Once all the stuffing is in the artichoke, place in a shallow dish, adding the remaining beer to the bottom. Bake for 15 - 20 minutes until the top is browned. 4. Serve with melted, drawn butter. |
