2 parts bacon sliced thin across, cooked 80 |
1 part onion, chopped |
1 part green pepper, chopped, and celery chopped |
butter, 1 quarter cup |
dash tabasco sauce |
salt and pepper, to taste |
top neck clams, opened, juice retained |
Directions:
1. cook bacon 80%, 2. drain off any extra fat 3. add onion, celery and pepper and saute until soft 4. remove from pan, add clam juice and cool slightly 5. stir in the melted butter 6. season with tabasco sauce, salt, and pepper 7. take four clam shells and put the mixture on top 8. of four opened clams 9. bake in convection oven at 350 degrees 10. for 15 minutes |
