This has that old-fashioned flavor you'd associate with a neighborhood Italian restaurant. The herbs give it that fresh flavor. Ingredients:
1/4 cup good extra virgin olive oil |
3-5 cloves of garlic, minced well |
3 can cans minced clams and their liquid, reserved |
1/2 cup white wine that you like to drink |
1 tsp. dried basil |
1 tsp. dried oregano |
1 tsp. pepper (or to taste) |
1/2 freshly chopped flat parsley |
1 pound of linguine, cooked |
freshly grated parmesan to serve on the side |
Directions:
1. Lightly saute' the garlic in the olive oil. Do not let this brown or it will be too bitter. 2. Add the clams., their liquid, the wine, and the herbs and simmer. Cook until the flavors come together and season with pepper to taste. 3. In a serving bowl pour this sauce over the pasta. 4. Pass the cheese around. |
