Ingredients:
3/4 cup all-purpose flour |
1 1/2 teaspoons baking powder |
1/4 teaspoon salt |
1 egg, lightly beaten |
1/2 cup milk |
1 1/2 teaspoons shortening, melted |
1 cup clams, drained and finely chopped |
vegetable oil |
cocktail sauce or tartar sauce |
Directions:
1. Combine flour, baking powder, and salt in a medium mixing bowl; stir well, and set mixture aside. 2. Combine egg, milk, and shortening in a small mixing bowl; mix well, and stir into dry ingredients. Add clams; stir until smooth. 3. Drop clam mixture by tablespoonfuls into deep hot oil (375°); cook 3 minutes or until fritters float to the top and are golden brown. Drain well on paper towels. 4. Transfer fritters to a warm serving platter. Serve immediately with cocktail sauce or tartar sauce. |
