This is the most flavourful clam chowder you will ever eat! Great for people who normally don't like clams as the bacon takes away the fishy taste. Ingredients:
500g thick sliced bacon (sliced along the width to 1/2 ) |
(2) 142g cans of baby clams (drained) |
3-4 medium-sized red potatoes (diced to 1/2 , do not peel) |
1 small onion (diced to 1/2 ) |
about 750 ml milk (you can use anything from skim to whole) |
4 cloves garlic (crushed or minced) optional |
1 tsp dill weed |
1/2 tsp ground black pepper |
1/2 tsp sea salt (or regular salt) optional |

Directions:
1. In a pan, cook bacon until crispy, add onion and garlic near the end so that the onion is caramelized and the garlic isn't cooked very much. Drain excess bacon fat. 2. In a pot boil potatoes until tender, then drain off the water. 3. Add cooked bacon and onions to pot of potatoes. 4. Add enough milk to cover the potatoes well. Add dill, salt, and pepper. Bring to a gentle simmer. 5. Add corn starch to achieve your desired thickness. 6. Add clams, stir well, remove from heat. Let sit 5 minutes before serving. |
