This is the best clam chowder recipe I've found yet! Add fresh tomatoes from the garden for a special taste and savor the rich aroma as it simmers on a cold day. Ingredients:
5 (6.5 ounce) cans minced clams (drain before using) |
2 tomatoes, diced |
1 large potato, chopped up |
1 onion, diced |
4 slices bacon |
8 ounces tomato sauce |
1 stalk celery, diced |
1 large carrot, grated |
2 cups water |
1/2 teaspoon salt |
1 pinch ground white pepper |
Directions:
1. Begin by dicing the bacon. Cook it in a large-sized saucepan with celery and onion until the bacon is crisp and the onion is a slight golden-brown. Make sure to pour off most of the fat. 2. Add the 2 cups of water, the clam juice from the cans, along with the thawed tomatoes, potatoes, carrots, salt, and pepper. Simmer this combination for 1 hour. 3. Finally, add the clams and the tomato sauce. Simmer, until barely boiling, for 15-20 minutes. Serve hot and enjoy! |
