This recipe is very simple to make and tastes delicious to anyone who doesn't like their chowder really fishy tasting. You can also replace the clams with cauliflower or chicken if desired. Ingredients:
2 slices of bacon |
1 onion, chopped |
1 cp celery and leaves, chopped |
1 tbls flour |
2 cups chicken stock |
2 medium potatoes, diced |
1 tsp old bay seasoning |
1 cp milk |
1 cp heavy whipping cream |
2 (6 1/2 oz) cans of chopped clams |
Directions:
1. Fry bacon in a large saucepan. Set aside and leave grease in pan. 2. Add onion and celery to the pan and saute until translucent. 3. Stir in the flour, then pour in chicken stock until thickened. 4. Dump in potatoes and Old Bay, bring to a boil, cover and simmer for 20 mins. 5. Add the milk, cream, clams and clam liquid. 6. Stir together and take off heat until ready to serve. 7. Just before serving heat through, and crumble bacon on top. |
