A layered casserole that tastes like tamales Ingredients:
6 cups water |
1 teaspoon salt |
2 cups cornmeal |
2 tablespoons canola oil |
1 pound ground beef, lean |
1 cup onion, chopped |
2 tbs minced peppers, jalapeno |
2 cups tomatoes, canned |
Directions:
1. Bring the water to a boil 2. Add salt and slowly stir in the cornmeal 3. Cook 15 minutes, stirring, until thick 4. Brown the ground beef and season with salt & cayenne pepper and ground cumin 5. Add the peppers and onions and cook until soft 6. Add the tomatoes and season to taste 7. In a prepared baking pan, start with a layer of cornmeal, then a layer of the meat and tomato mixture, then more cornmeal. 8. Repeat until the pan is full 9. Bake at 400 for 20 to 30 minutes 10. Serve hot |
