Simple lentil soup. You may use broth instead of the water if you omit the salt in the recipe. Adjust sodium content as needed. Ingredients:
1 1/2 cup lentils, dry |
1/2 cup carrot, diced |
1/2 cup celery, chopped |
1/2 cup onion, diced |
2 tablespoons parsley, minced |
1/2 teaspoon salt |
1/8 teaspoon pepper |
8 cups water |
Directions:
1. Put everything into a soup pot 2. Bring to a boil 3. Reduce to a slow simmer 4. Cover and cook for 1 hour 5. Taste and adjust seasoning as needed |
