Claire's Kale & White Bean Soup |

A nourishing soup with dark green kale and white kidney (cannelini) beans. Ingredients:
1/2 cup onion |
1/2 cup celery |
2 cloves garlic |
1 tbs olive oil |
1/2 pound kale |
1 1/2 quarts chicken broth |
2 cups cannelini beans |
Directions:
1. Saute the onion, celery and garlic in the olive oil until soft. If desired, add a little crushed red pepper. 2. Add the chicken broth and drained beans and bring to a simmer. 3. Add the chopped kale and let it cook down before adding more. 4. Cover and simmer until the kale is tender. 5. Taste and add salt and pepper |
