Claire's Cauliflower & Chickpea Curry |

Spicy Indian dish for two. Season with garam masala or curry powder, or a mixture of your own Indian spices. Ingredients:
1 1/2 cups chickpeas |
2 cups cauliflower |
1 tbs olive oil |
1 tsp curry powder |
1/2 cup onions, chopped |
1/2 cup tomatoes, diced |
Directions:
1. Saute the onions and curry powder or use garam masala or a mixture of ground indian spices) in the olive oil. Add the drained chickpeas and cauliflower. 2. Add 1 cup of water. 3. Add garam masala spices, or curry powder to taste. 4. Reduce heat to a simmer, cover and cook until the cauliflower is tender. |
