Claire's Abruzzo Style Tomato

This is my grandmother's basic recipe. You can add fresh basil, parsley, red pepper flakes, a bay leaf and more salt if you feel it needs it. If too thick, add water or red wine. If too thin, add tomato paste or cook uncovered until it thickens. Italian Americans call this type of sauce gravy even though it does not remotely resemble American gravy.
Ingredients:
1 pound pork loin
4 tbs olive oil
1 cup onion, chopped
4 cloves garlic, minced
4 cups tomato puree
2 cups tomatoes, diced
1/2 tsp salt
1/4 tsp pepper
Directions:
1. Cut the pork into cubes
2. Brown the pork on all sides in the olive oil and remove the meat from the pot
3. Saute the onions and garlic in the same pot
4. Put the meat back in and add the tomatoes, rinsing each can with about a half cup of water
5. Add any spices you wish
6. Simmer slowly, covered for at least 4 hours.
