Citrusy Orzo and Black Beans |

This summer dish came about from not knowing what to make for dinner and searching through the cabinets. We had orzo and a can of black beans. I knew it was a success when my then 7 year old daughter had 4 helpings! This can also be used as a side dish. Ingredients:
2 cups cooked orzo |
1 -2 garlic clove, sliced thinly |
1 shallot, diced |
1/2 red pepper, seeded and diced into roughly 1 inch chunks |
1/2 green pepper, seeded and diced into roughly 1 inch chunks |
1 -2 tablespoon olive oil |
1 orange, juiced |
1/4 cup chopped fresh oregano |
1/8 teaspoon red pepper flakes |
1 (15 1/2 ounce) can black beans, drained and rinsed |
Directions:
1. Cook orzo as directed on package. 2. Drain orzo, place in a medium bowl and set aside. 3. Heat olive oil in a medium skillet over medium-high heat. 4. When the oil is heated (about 2 minutes), add the garlic and shallot. Saute until tender and slightly browned, 5 minutes or so. 5. Add the green and red peppers. Saute until tender-crisp. 6. Remove from the heat and combine with the orzo. Mix well. 7. Add the beans to the bowl and mix to combine. 8. In a separate bowl, combine the orange juice, oregano and red pepper flakes. Stir well. 9. Drizzle over the orzo and toss. 10. Season with additional red pepper flakes if desired and a touch of salt. |
