This disappeared faster than it took to make it. Cool and refreshing on a super hot night. Even the youngest loved it despite telling them it was good for them Ingredients:
8oz cream cheese, 1/3 less fat variety, softened at room temp |
8 oz sour cream, low fat |
1/2 c. skim milk ricotta |
2 tbsp. powdered sugar |
2 tsp. orange zest |
2 tbsp orange juice |
15 oz can mandarin orange slices, well drained |
8 oz can pineapple, (bits or chunks) well drained |
1/2 box vanilla wafer cookies, or shortbread cookies |
Directions:
1. Mix the cheeses and sour cream together 2. Stir in sugar, orange juice and zest til thoroughly mixed. 3. Spread in the bottom of a 9x9 glass casserole dish 4. Cover the top with the oranges and pineapple 5. Cover with plastic wrap and refrigerate for an hour 6. Place cookies in a plastic bag and crush with a rolling pin 7. Sprinkle evenly over fruit 8. Serve immediately. |
