Here's a tip for chopping lots of basil or any other leafy herb. Pack the leaves in a measuring cup, and snip with kitchen shears until they're finely chopped. Ingredients:
3/4 cup frozen orange juice concentrate, thawed and undiluted |
1/2 cup water |
1/4 cup plus 2 tablespoons fresh lime juice |
1/4 cup minced fresh basil |
1 1/2 tablespoons olive oil |
1 1/2 teaspoons minced fresh tarragon |
1 1/2 teaspoons dijon mustard |
1/8 teaspoon salt |
Directions:
1. Combine all ingredients, and stir mixture well with a wire whisk. Serve chilled or at room temperature over mixed salad greens, fruit, or seafood. |
