These shrimp are great as a meal over rice and veggies, over a salad or as an appetizer! Found online a few years ago. Ingredients:
1 orange |
1 lime |
4 green onions |
2 teaspoons olive oil, divided use |
1 pound shrimp, peeled and deveined |
2 tablespoons chopped fresh cilantro |
salt and pepper |
Directions:
1. Cut orange and lime in half and squeeze juice into a large resealable bag. 2. Grate orange and lime zest and reserve. 3. Chop green onions and add to bag, along with 1 teaspoon oil. 4. Add shrimp, seal bag and shake to coat. 5. Refrigerate for 15 minutes, shaking occasionally. 6. Heat 1 teaspoon oil in a large skillet over medium-high heat. 7. Add shrimp and marinade to skillet. 8. Saute until shrimp are pink and cooked through, 1 to 2 minutes. Sprinkle with cilantro and reserved zest; season with salt and pepper. |
