A really different sweet hot salsa with a variety of citrus and avocado. tasty as appetizer or on fish! Ingredients:
1 ruby grapefruit |
1 honey tangerine (or clementine) |
1 valencia or navel orange |
1 blood orange |
1 meyer lemon (if you can get or a regular is ok) |
1 lime |
1 ripe avocado |
6 kumquats, minced |
1 fresh red hot chili, rinsed, seeded and minced |
2 tablespoons fresh chopped mint |
1/2 teaspoon salt |
Directions:
1. Peel, seed and segment all the citrus fruit into 1/2 inch cubes, discarding membranes. 2. Pit, peel and dice avocado. 3. In a bowl, gently mix citrus cubes, avocado, kumquats, chili, mint and salt. 4. Tasty as appetizer or on fish! |
