CITRUS SALAD WITH AVOCADO This recipe came from an estate sale. I obtained it when I purchased the family collection from the Malta Estate in Bedford, Texas in 1991. Ingredients:
3 corn tortillas |
4 oranges |
4 grapefruit |
2 tablespoons honey |
2 tablespoons raspberry vinegar |
1 whole avocado |
6 fresh mint sprigs |
Directions:
1. Slice tortillas into very thin strips then place on cookie sheet and bake at 325 for 15 minutes. 2. Grate oranges to obtain approximately 2 teaspoons orange rind for each serving. 3. Peel oranges and grapefruits then section and seed and set sections aside. 4. Mix honey, vinegar, orange and grapefruit sections then add orange rinds and tortilla strips. 5. Toss all ingredients gently and top with avocado slices and a sprig of fresh mint for garnish. |
