Tasty lemon and poppy seed loaf.
Ingredients:
3/4 cup low-fat milk
1/2 cup poppy seed
1/2 cup applesauce
3/4 cup caster sugar
2 eggs
1 3/4 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 cup lemon juice
1 lemon, rind of
Directions:
1. Heat milk, add poppy seeds and remove from heat.
2. Beat together apple puree, sugar and eggs.
3. Sift dry ingredients and stir into apple mix.
4. Add milk and poppy seeds, lemon juice and rind.
5. Cook at 180 (degrees c) for approx 1 hour.
