Citrus-Poached Orange Roughy |

Ingredients:
4 (6-ounce) orange roughy fillets |
cooking spray |
1/2 teaspoon grated orange rind |
1/3 cup fresh orange juice |
2 tablespoons lime juice |
1/4 teaspoon salt |
1/4 teaspoon crushed red pepper flakes |
2 tablespoons chopped green onions |
Directions:
1. Arrange fish in a single layer in a 13- x 9-inch baking dish coated with cooking spray. 2. Combine orange rind and next 4 ingredients in a small bowl, stirring well. Pour mixture over fish, and bake at 400° for 20 minutes or until fish flakes easily when tested with a fork. 3. Remove fish from dish with a wide spatula, and place on a serving dish. Sprinkle fish evenly with green onions. |
