This is a salsa I made to go with my Not-Your-Traditional Acaraje. I have a feeling it will go great with just about anything, and a food processor makes preparing it a snap. Make it a day ahead and let the flavors mingle, or 5 minutes before meal time. Read more ...either way it will bring a load of fresh color and flavor to your dish, with a kick to boot. Ingredients:
1/2-1 habanero chili, depending on tolerance |
1/2 small red onion |
2-3 mini sweet peppers (i used orange and yellow for color) |
1.5 c grape tomatoes |
1/2 can mandarin oranges, drained |
handful of cilantro |
juice of one lime |
salt to taste |
Directions:
1. Pulse chili, onion, and sweet peppers a few times in food processor. 2. Add tomatoes. Pulse 1-2 times. 3. Add cilantro and oranges. Pulse until salsa reaches desired consistency. 4. Transfer to serving bowl and stir in the juice of one lime. Salt to taste. 5. Refrigerate in non-reactive airtight container for up to three days....as if it will last that long! |
