Citrus Glazed Blueberry Bread |

Nothing reminds us it is summer time more than a fresh loaf of blueberry bread. This bread will give you something to do with those Blueberries! It uses some fresh lemon juice to balance the blueberries and is topped with a glaze made from fresh citrus. Read more . Enjoy! Ingredients:

1/3 cup butter; melted |
1 cup granulated sugar |
1 tbsp juice from a lemon |
2 eggs |
1 1/2 cups all-purpose flour |
1 tsp baking powder |
1 tsp salt |
1/2 cup milk |
zest from 1/2 fresh lemon |
1/2 cup chopped walnuts |
1 cup fresh (or frozen) blueberries |
glaze |
2 tbsp lemon juice |
1 tsp lemon zest |
1/4 cup of sugar |
Directions:
1. Bread 2. Preheat oven to 350 degrees F and grease an 8 X 4 inch loaf pan. 3. In a batter bowl, beat the butter, sugar, lemon juice and eggs. 4. In a small bowl combine the flour, baking powder and salt. 5. Stir in (by hand with a whisk) one half of the flour mixture into the egg mixture then stir in 1/4 cup of milk. Repeat this step with the remaining flour mixture and milk. 6. Bake in preheated oven for 55-65 min until a toothpick inserted into the center comes out clean. 7. Cool bread for 10 min in pan and then turn onto a cooling rack for 15-20 min. 8. Glaze 9. Mix all the ingredients in a small bowl. 10. After the bread has come out of the oven pour the glaze over the loaf while it is still warm. |
