This week's muffin is my attempt at a natural remedy to my exhaustion. Eventhough I get 7-8 hrs of sleep a night I am still tired all the time and I am hoping to cure it naturally and not with a prescription. Ingredients:
1 c. whole wheat flour |
1 c. instant oatmeal, plain |
1 c. wheat germ |
1/4 c. flax seeds |
1 1/2 tsp. baking soda |
1/2 tsp. sea salt |
juice of 1 orange |
1/2 c. applesauce |
2 t. olive oil |
1/4 c. honey |
2 t. 100% maple syrup |
1 egg |
2 tsp. vanilla |
2/3 c. strawberries, diced |
Directions:
1. Mix all ingredients, except strawberries, in large bowl. 2. When well blended fold in strawberries. 3. Fill paperlined muffin tins to the top (this way you get the nice muffin top hangover) 4. Bake at 350 F for 20 min. 5. **Makes 1 dozen |
